Preparing vegetables doesn’t have to be complicated.

Keep these basic, cancer-fighting veggie-prep suggestions in mind:

  1. Raw veggies: With minimal seasoning and next-to-no prep work, you’ll get maximum health benefits from raw veggies like broccoli, beets, carrots, tomatoes, brussels sprouts, zucchini, leafy greens, onions, peppers, berries, garlic, and even seaweed and nuts.
  2. Boiled veggies: With that single pan we mentioned, you can boil just about any vegetable within minutes. It’s so easy, it barely counts as cooking! Add a little olive oil and salt to your cabbage, potatoes, carrots and onions, and before you know it, healthy becomes delicious.
  3. Roasted veggies: Fresh vegetables taste great roasted, too, with only a little seasoning. Try roasting them on a cookie sheet or in a grill basket.

There’s nothing like a trip to a local farmers market, and there’s no better place to find a wealth of fresh ingredients, either. Grab fruits, veggies, and other guiltless, healthy snacks while you’re there, like fresh-ground peanut butter, hummus and even sushi.
