Vegetables and Side Dishes: Texas Caviar


1 (15 oz.) can black beans, rinsed and drained
1 C. frozen white shoepeg corn
1/2 C. red onion, minced
1 bunch green onions, sliced (about 1 C.)
1 fresh jalapeno pepper, seeded and diced
1 green pepper, seeded and diced (about 1/2 C.)
1 bunch cilantro, washed and chopped (about 1/4 C.)
3 large tomatoes, diced (about 3 C.)


8 oz. Zesty Italian dressing
1 tsp. chili powder
1 tsp. minced garlic
2 T. lime juice


Mix all ingredients in large bowl, toss with dressing. Chill and serve with tortilla chips.
