Vegetables and Side Dishes: Spicy Red Cabbage


1 1/2 lbs. red cabbage, shredded
3/4 C. unsweetened apple juice
1/2 C. chopped onion
1/2 C. water
2 tsp. sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves
1 medium apple cored and chopped (about 1 C.)
2 T. red wine vinegar


Combine cabbage, apple juice, onion, water, sugar, cinnamon and cloves in Dutch oven. Bring to a boil. Cover. Reduce heat and simmer 1 hour. Stir in chopped apple and red vinegar. Cover and simmer 5 minutes.
