Vegetables and Side Dishes: Lebanese-Style Lima Beans


1 T. olive oil
1/2 large onion, chopped (about 1/2 C.)
1/4 tsp. salt
1 pkg. (16 oz.) frozen lima beans
1 can (8 oz.) tomato sauce
2 C. water
1/4 tsp. black pepper


Heat olive oil over med-high heat. Add onion and salt. Sauté onion on med-high heat, stirring until onion is slightly browned and the bottom of the pot begins to brown. Add lima beans, tomato sauce, water, and pepper. Bring to boil. Turn to low-med heat and cook for 45 minutes. Serve over brown rice.
