Vegetables and Side Dishes: Honey Roasted Sweet Potatoes


2 lbs. red-skinned sweet potatoes
2 T. olive oil
2 T. honey
1 tsp. fresh lemon juice
1 tsp .fresh orange rind
1 tsp. ground cinnamon
1/2 tsp. salt


Preheat oven to 350* F. Peel and cut the sweet potatoes into 1 inch cubes and put in a 9x13 baking dish. In a small bowl whisk together olive oil, honey, cinnamon, orange rind and lemon juice. Pour over potatoes and toss to coat. Sprinkle with the salt, and bake, stirring occasionally, for about 1 hour, until potatoes are tender. Prep time about 15 minutes, cook time about 1 hour (less if using a covered Dutch oven or casserole dish).
