Vegetables and Side Dishes: Aromatic Sweet Potato Wedges


1 1/2 lb. sweet potatoes, peeled and cut lengthwise into 1/2 inch wedges
1 T. + 1 tsp. olive oil
2 tsp. fresh thyme, rinsed and air dried (or 1/4 tsp. dried)
1/4 tsp. salt
1/2 tsp. pepper
1/4 tsp. ground nutmeg


Grease baking sheet with 1 tsp. olive oil. Place potatoes in a single layer and brush potatoes with remaining olive oil. Sprinkle potatoes with thyme, salt, pepper, and nutmeg. Bake at 450* on bottom rack for 25-35 minutes until tender and browned on the bottom.
