Soups: Chicken Tortellini Soup


3 boneless chicken breasts
1 tsp. minced garlic
1/2 tsp. black pepper
1/2 tsp. oregano
1/4 C. fresh parsley, chopped
1 tsp. Frank's Red Hot or similar hot sauce
1 tsp. sugar
2 (14 oz.) cans low-sodium chicken broth
4 C. water
1 (4 oz.) can sliced mushrooms
1 (10 oz.) box chopped spinach, thawed and drained
1 (14 oz.) can diced tomatoes
2 C. spinach and cheese tortellini, cooked and drained


Sauté chicken breasts in 2 T. olive oil, remove from pan, and dice into bite sized pieces. Return to pan and add in garlic, sauté for 3 minutes more. Add in broth, water, pepper, oregano, parsley, hot sauce and sugar, simmer for 20 minutes. Add in diced tomatoes, mushrooms and spinach. Simmer 10-15 more minutes. Add cooked tortellini about 5 minutes before serving. Sprinkle grated parmesan cheese over soup to serve.
