Salads and Dressings: Spinach, Fruit and Nut Salad

Ingredients

3 halves pecans or walnuts
2 C. spinach leaves
1/2 C. drained mandarin oranges
1/4 C. chopped cucumber
2 T. fat-free Vinaigrette dressing (may substitute Paul Newman light Raspberry Vinaigrette dressing)

Directions

Chop nuts. In bowl, combine baby spinach leaves, orange sections, cucumber, and nuts. Add dressing and toss. Serve immediately.
