8 oz. package whole wheat spaghetti noodles
1/2 red onion, sliced or coarsely chopped (optional)
1 lb. broccoli, cut into small spears
3/4 C. low fat Italian dressing or red wine & olive oil dressing or a favorite vinaigrette dressing
Cook pasta according to package directions for al dente. Cut up broccoli, place in colander. When pasta is done, pour into colander over broccoli; leave in colander 3 minutes to steam broccoli. Pour pasta and broccoli into large serving bowl. Cool in refrigerator 30 minutes. Add onions, if desired. Pour 1/4 of salad dressing over and stir. Continue to add salad dressing and stir, until pasta and broccoli is coated as desired.
