Vanishing Oatmeal Cookies


1 C. applesauce
1/2 C. Splenda brown sugar
1/4 C. Splenda
2 egg whites
1 tsp. vanilla
1 1/2 C. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
3 C. oatmeal
1 C. raisins (or dried cranberries or walnuts)


Heat oven to 350*. Beat sugars and applesauce together until smooth. Add egg whites and vanilla - beat well. Add flour, baking soda, and cinnamon - mix well. Stir in oats and raisins. Drop by tablespoonful onto ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Cool on cookie sheet.

Serves: 48 (makes about 4 dozen cookies)
