Desserts: Vanishing Oatmeal Cookies


3 (8oz.) pkgs. Neufchatel cream cheese
4 eggs
1 1/2 tsp. lemon juice
1 1/2 tsp. vanilla flavoring
1 1/3 C. Splenda
1/4 C. low-fat sour cream

2 T. light butter, melted
2 T. Splenda
1 C. reduced-fat graham cracker crumbs
Cooking spray


Combine ingredients for crust, press in bottom of spring form pan that has been sprayed with cooking spray. Bake at 375* for 8-10 minutes. Add cream cheese to mixing bowl, beat until fluffy. Add other ingredients and mix well. Pour mixture over cooled crust. Wrap bottom and sides of pan with foil and put onto deep baking sheet. Add enough boiling water to go halfway up side of pan. Bake 350* for 1 hour. Refrigerate leftovers.
