Entrees: Orange Roughy Almondine


1 1/2 tsp. lemon juice
1 1/2 tsp. Smart Balance light spread
1/4 tsp. salt
1 lb. orange roughy fillets
1/4 C. light mayonnaise
1/2 C. cracker crumbs (recommend Wheat Thins Harvest 5 Grain, crushed)
3 T. Smart Balance margarine, melted
3 T. slivered almonds


Combine first 3 ingredients in a 12x8x2 inch baking dish. Arrange fish in the dish. Salt fish to taste and spread light mayonnaise over the fish. Combine cracker crumbs, 3 T. melted Smart Balance, and the almonds. Sprinkle over fish. Bake at 400* for 10-15 minutes or until fish flakes easily when tested with a fork.
