Entrees: Grilled Tilapia with Garden Salsa


1/2 C. lime juice
1 T. olive oil
1/2 tsp. black pepper
1/2 tsp. garlic salt
4 tilapia filets (6 oz. each)
1 C. corn kernels
1 medium tomato, chopped
1 green chili, chopped
1 green onion, chopped
1/4 tsp. cumin, ground


Preheat the grill (grease grill or use foil, so the fish will not stick). Mix lime juice, oil, salt, pepper and garlic together. Place the fish fillets into a plastic Ziploc bag. Pour 3/4 of the lime juice marinade into the bag and shake the bag gently. Reserve 1/4 of the lime juice marinade for the salsa. Marinate fish for about 30 minutes (no more). Place marinated fish directly on the grill or in foil and grill for about 8 minutes. For the salsa: Combine all of the ingredients and the reserve marinade. Remove the fish from the grill and top with the salsa.
