Entrees: Chicken Mozzarella and Roasted Pepper Sandwich


1 small pita (may substitute small wheat tortilla if desired), about 1 oz. 3/4 oz. part-skim mozzarella 2 tsp. light mayonnaise 2 oz. cooked chicken (may substitute salmon) 1 slice roasted red pepper May also add sliced mushrooms or other fresh vegetable, if desired


Cut 3/4 of the way around the edge of the pita; open to form a pocket. Spread inside of pocket with mayonnaise; fill with chicken, red pepper, and part-skim mozzarella. May heat in microwave on 50% for 1 minute if desired.
