Entrees: Broccoli Mac Casserole

Ingredients

Non-stick canola spray or Pam
2 C. whole grain (wheat) penne, uncooked
1/2 C. skim evaporated milk
1/4 C. eggbeaters
1 T. I Can’t Believe it’s Not Butter (Light)
1/4 tsp. black pepper
1/4 tsp. Mrs. Dash table blend
1 C. finely chopped broccoli
1/4 C. fat-free mozzarella cheese, shredded
1 1/4 C. fat-free cheddar cheese, shredded

Directions

Cook penne according to directions - do not add salt to cooking water. Drain (Do not rinse). Preheat oven to 350* F. Spray skillet with canola spray or PAM, add broccoli, and sauté for about 4-5 minutes. Combine penne, broccoli, and all other ingredients, mix thoroughly, and use some of cheese on top of casserole. Place mixture in baking dish sprayed with canola or PAM. Bake for 30 minutes or until brown and bubbly. Let stand for 10 minutes to cool.
