Entrees: Apricot Glazed Turkey Cutlets


4 turkey cutlets - 7oz. each
1/4 tsp. pepper
2 T. olive oil
1/2 C. apricot nectar
1/4 C. light soy sauce
1 clove garlic minced
1/3 C. apricot preserve
2 C. steamed brown rice


Sprinkle turkey with pepper. Heat oil in a large skillet over medium heat. Add turkey to the pan and sear one side. Combine nectar, soy sauce, garlic and preserves in a small bowl. Pour mixture over turkey. Reduce the heat, cover and cook until turkey is done, about 10 minutes. Serve over hot brown rice.
