Breakfast and Brunch Recipes: Nut and Fruit Breakfast Bites

Ingredients

1/3 C. light tub spread/margarine
1/3 C. Splenda
1/4 C. honey
1/2 tsp. ground cinnamon
1 1/4 C. dried mixed fruit such as raisins, apples and cranberries
1 C. uncooked quick oats
1 3/4 C. uncooked old fashioned oats, coarsely crushed
1/4 C. chopped walnuts

Directions

Combine margarine, Splenda, and honey in a saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil for 1 minute. Remove from heat and add remaining ingredients. Press mixture into bottom on 9 inch square baking pan coated with cooking spray. Allow to cool and cut into 16 pieces. Store in covered container in refrigerator. Pair 1 or 2 of these crunchy, chewy bites with nonfat yogurt or a piece of fruit and you've got a great breakfast on the run.
