Breakfast and Brunch Recipes: Mini Egg White Frittatas

Ingredients

6 eggs
1/2 C. cherry or grape tomatoes sliced in half
1/4 C. red onion, chopped
1/4 C. green pepper, chopped
1/4 C. mushrooms (use your favorite variety)
1/2 tsp. black pepper
1/2 tsp. Ms. Dash Original salt-free seasoning blend
1/2 tsp. Ms. Dash Extra Spicy salt-free seasoning blend (optional for kick)

Directions

Preheat oven to 350* F. Spray a 6 cup muffin tin with fat free cooking spray (i.e. PAM) for easy removal after baking. Crack and separate each egg, placing 1 egg white in each muffin cup. Top each with tomato, onion, mushrooms and green pepper. Sprinkle each egg with black pepper and Ms. Dash. Bake for 12 minutes or until set. Remove and let cool. Serve warm. Variation: Try with different flavors of seasoning or your favorite veggies before baking. Try topping with a sprinkle of low fat cheese after removing from oven. Experiment until you find your favorite combination! Tip: For a quick easy on-the-go breakfast, make extras and refrigerate in sandwich bags. Reheat in 15 seconds in the microwave!
