Breakfast and Brunch Recipes: Make Your Own Granola

Ingredients

3 C. oatmeal
1 C. steel cut Irish oatmeal
1/2 C. wheat germ
2/3 C. sesame seeds
2 C. whole almonds
1/4 C. olive oil
1/2 C. pure maple syrup or honey
2 tsp. pure vanilla extract
2 tsp. pure almond extract

Directions

When I started making my own granola, I used the 'Easy Crunchy Granola' recipe from Diet For A Small Planet by Frances Moore Lappe and added some of my favorite flavors and ingredients. The following recipe is my favorite spin of Lappe's 'Easy Crunchy Granola:' Preheat oven to 400*. I use a non-stick surface 13x9" rectangular cake pan to make the granola. Mix oatmeal together with steel cut Irish oatmeal in the baking pan. Toast for 10 minutes in 400* oven. Add to the oatmeal mix, wheat germ and sesame seeds. After mixing these ingredients into the oatmeal mix, toast in the oven for 10 more minutes. Add whole almonds to the granola mixture and toast again for 10 minutes. While the mix is toasting for the last time, heat the following in a small sauce pan on low heat until it is hot and begins to bubble: olive oil, pure maple syrup, pure vanilla extract, pure almond extract. Take the dry granola mix out of the oven and pour the hot liquid mix into the granola. Distribute well. When cooled, store in an air tight container. Optional ingredients: dried cranberries, raisins, slivered almonds. For a healthy breakfast or snack, mix granola into yogurt (I use fat-free vanilla). Eat as is, or add fresh fruit.
