Breakfast and Brunch Recipes

Featured Recipe: Garden Vegetable Crustless Quiche

4 eggs, 1 egg white
1 1/2 C. (6 oz.) shredded 2% extra sharp cheddar cheese or Mexican-style reduced-fat cheese
1/4 C. skim milk
1/4 C. all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 C. 2% low-fat cottage cheese
Cooking spray
2 C. thinly sliced zucchini (about 2)
1 C. diced cooked potatoes or frozen hashbrown potatoes
1/2 C. chopped green bell pepper
1/2 C. cooked sweet onion
1 C. sliced mushrooms
1 tomato, thinly sliced (about 1/2 C.)

Preheat oven to 400*. Beat egg white and eggs in a large bowl until fluffy. Add milk, flour, baking powder, salt, and cottage cheese. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add zucchini and the next 4 ingredients (through mushrooms). Sauté for 5 minutes until tender. Add the zucchini mixture and parsley to egg mixture. Pour mixture into a 9 inch pie plate coated with cooking spray. Top with remaining 1/4 C. cheese. Arrange tomato slices over cheese. Bake at 400* for 15 minutes. Reduce oven temperature to 350* (do not remove dish from oven), and bake for 30 minutes or until lightly browned and set. Note: leftovers are great microwaved. Try it served with a topping of salsa.
